What could be better than a burrito for the first meal of the day? It is full of fiber, protein and carbs, everything you need to get a great start to the day. But, a breakfast burrito is usually a little different than the one you have for dinner.
When it comes to a burrito as a first meal of the day, you’ll usually want to make it a little breakfasty. You’ll want to keep the beans, of course. Beans are full of good carbs, protein and fiber. You’ll get a lot more out of your pinto beans than you will a breakfast cereal! So, the beans stay.
For meat, hamburger isn’t quite right for breakfast. Shredded beef is good, and of course, bacon is even better! Who doesn’t love a couple of strips of bacon in the morning?! So, skip the beef and go American breakfast by adding two strips of bacon.
Breakfast always screams eggs. Of course you want an egg in there cooked however you prefer them: over easy, well done, scrambled, they all work well in a burrito.
Add a little pico de gallo on top of your mixture of beans, bacon and egg. Add a tablespoon or two of shredded cheddar cheese and some minced onion, if you prefer.
Making your burrito might be a lot of work due to all the different ingredients you’ll need to cook. The best way to make breakfast burritos is on a cook day. Make up ten burritos, individually wrap them in plastic wrap and stack them up in the freezer. When you want to eat one, unwrap, place on a small plate, cover with a wet paper towel and microwave it on low for a couple of minutes (depending on the strength of your microwave). It’ll be hot and ready to go.
